healthy eating doesn’t have to be expensive…

Oh the joys of a Farmer’s Market! We had such a great time gathering our goods from the stands this morning. We talked to a friend and shared recipes with my kids pediatrician. I left there ready to cook and bake. Sometimes we think that we can’t afford to eat organic, healthy food; yet often all it takes is a little ingenuity and adventure. For lunch I made something new…it was a hit and it was cheap!

Pasta with Swiss Chard and Asiago

The pasta was whole wheat penne purchased at Walmart for .88
Swiss chard was purchased at the farmer’s market for 1.00
add in an onion, a little garlic, red pepper flakes, olive oil, cheese…and for the non dieters, crumbled bacon
you have a great healthy meal that fed all 5 of us for under 5.00!
We had sliced garden fresh tomatoes and some blueberries on the side.

So, I am off to roast chili peppers for green chili enchiladas tomorrow! I love to cook!
