There is a lot of interest in healthy eating these days; New Years resolutions, churches doing the Daniel Fast, etc., and so I just wanted to share one of our favorite healthy recipes. We have been narrowing our food choices little by little over the past 5-6 years. My husband, Greg, was diagnosed as pre-diabetic several years ago. I made it my goal to find things that would satisfy his “sweet tooth”. Turning to whole grains, organic products, raw sugar, honey, agave nectar, and fruit have been my answer. I am happy to report that much to the surprise of his doctor Greg has never had to go on medication. More importantly, with the change in his diet, he has completely reversed his blood sugar situation! Below is one of the recipes I made up to help us achieve our health goals. It will NOT taste like a refined sugar, white flour, decadent muffin; it will however taste healthy, slightly sweet, and satisfying. Since we have changed our eating this type of food tastes wonderful to our entire family. So for those of you on the Daniel Fast, don’t go back to your old ways. Come on over to the whole food, whole grain side of life!
WARNING: They will NOT taste like Otis Spunkmeyer! They will become addictive if you give it a try!
Oatmeal Muffins

1c whole grain flour (I prefer whole wheat pastry or stone ground unbleached white)
1c oats
1T baking powder (be sure and buy Aluminum free)
1t salt
2 eggs
3/4c water or milk (I almost always use water)
1/2c oil
1/4c- 1/2c agave nectar, honey, or organic sugar crystals
mix together in a large bowl stir in nuts, fruit, and/or chocolate chips
tonight I filled a 3/4 c with chopped dates, raisins, and chocolate chips
place in muffin tin sprayed with baking spray
bake 400 degrees for 15 min
use a knife to lift out of muffin tin
let cool slightly before eating
the muffin will have a slight “scone” texture and taste
they will keep a day or 2
freeze if you don’t plan to eat them within 2 days
